Pan Seared Salmon with a Soy Sauce, Shitake mushroom, & Miso Galze



Ingredients

·         Salmon Fillets (8)
·         2 Cups corn syrup
·         ½ cup Soy Sauce
·         10 Garlic Cloves (Minced)
·         Ginger (Minced)
·         5 Shitake Mushrooms (Rough Chopped)
·         2 Tbs. Red Miso
·         Sesame seeds (white and black)
·         Scallions (chopped)
·         Olive oil

Directions

1.       In a medium sauce pan combine Corn syrup, soy sauce, garlic, ginger, mushrooms, and miso together in medium sauce pan
2.       Bring to a boil, Wisk every so often
3.       Add more soy sauce for desired taste (too much can make the glaze salty)
4.       In a sauté pan heat oil to high temp
5.       Sear salmon fillets to desired color on both sides (approx. 2 min on each side)
6.       Place in pan and coat salmon with sauce and place in oven at 350 degrees for about 15 mins. or until salmon is done
7.       When finished garnish with sesame seeds and scallions and serve

Blueberry Kiwi Mojito



Ingredients
·         12oz Blueberries
·         10 Kiwi (peeled and cut in half)
·         1 4oz pack of mint
·         2 Cups Sparkling Water
·         ½ Cup Sugar (adjust for personal preference)
·         1 ½  Cup Rum (adjust to personal preference)
·         Ice as needed

Directions

1.       Place the cut kiwis in a food processor or blender along with the sugar and lime juice until pureed
2.       Transfer the puree to a pitcher or glasses and add the rum
3.       Crush the blueberries with a muddle (if you don’t have one you can use the back of a wooden spoon)
4.       Add crushed blueberries
5.       Serve and enjoy

Beef Bulgogi




Ingredients 

Marinade

·         2 Pounds of Beef Thinly sliced
·         1 Cup Soy Sauce
·         1 Onion
·         1 Pear
·         1 Apple
·         12 Garlic Cloves
·         1 Cup Brown Sugar
·         1 Cup Regular Sugar
·         4 Tbs Sesame oil

 Directions

1.       Mince onion, pear, apple, and garlic
2.       Combine soy sauce, sesame oil, onion, apple, pear, and garlic together in bowl
3.       Wisk in brown sugar and white sugar
4.       Pour over beef and mix until covered
5.       Place in refrigerator and let sit for at least an hour or overnight if possible

Here is where you can get creative.  After the beef had been in the marinade for at least 1 hour you are ready to sauté.  You can sauté the beef with Onion, peppers, or white mushrooms if you like.

If you like you can also grill the beef as well.  On the grill you quickly grill the beef until slightly charred and done approx. 2 mins. on each side.

This dish is best served over rice.  But you can pair it with whatever you like
